Miss Me?

So, a lot has happened in the past few months.  We got married (YAY),  we sold our house, and moved to Saskatchewan, Canada, all in the same month.  It was not planned this way.  But we took it in stride, and here we are.  Here is my favourite picture from our special day.

If you would ever consider eloping, all I have to say is, DO IT!  Grab your bestest friends and your bestest family members and head south.  Our day was perfect.  Not only because our wedding was beautiful but I married the best man in the world.  Together for 11 years, we finally made it official in front of our closest friends.  Best day EVER!

Who Knew??

I am an avid user of Bath and Body Works lotion.  But sometimes, I get carried away and buy so much, there is not enough days in the year to wear it.  I went to apply one of my favourite lotions after neglecting it for a while, only to find that is smelled funny.  Just off.  Not a big deal.  I will chuck it and but some more, after all, I have no idea when I bought it, and there is no stamped expiry on the bottle.  So I venture into my local BBW store, and as I am running around smelling everything, a very nice employee approaches me to see if I need any help.  I tell her I am hoping they have some Secret Wonderland since I think mine is expired.  She says, "Just bring it in.  You will get a new one.  No receipt. 100% satisfaction guaranteed."  So even though, I admitted to having no idea how old this cream was, I can still take it in and get a new one.  Fabulous!  I love customer service like this!

Chicken Fajitas

So I fell off the face of the Earth. Or rather, I feel like I was pushed off.  The Universe just wants to laugh at me as I find my way back.

So I thought I would share a fabulous recipe to welcome myself back to my poor deserted blog. And maybe, in the next few weeks, you may hear my rants about why I drank a lot of wine neglected my blog.

2 Large Boneless Skinless Chicken Breasts
2 tbsp Canola Oil
Dash of Fresh Pepper
1/2 Red Pepper, sliced
1/2 Red Onion, thinly sliced
1 tbsp Lemon Juice
1/2 cup Mild Salsa
1 Tbsp Cilantro
10 Flour Tortillas
Optional Toppings:
Sour Cream
Cheddar Cheese
Hot Sauce

Cook chicken in oil until no longer pink.  Add peppers and onions and cook until tender crisp.  Add lemon juice, salsa and cilantro.  Cook on low until heated through. Place tortillas on a plate and microwave for 15 seconds. Scoop fajita mixture onto tortillas and top with grated cheddar, sour cream, and for fun, a little hot sauce.

Back-To School Shopping...Already??

Where on earth has this summer gone?  Being a bargain hunter, I have noticed a lot of emails from stores saying "Back-to-school sales", so I decided to try something a little different this year.  I will not spend more than $10 on a piece of clothing for my kids.  This includes pants, hoodies, polos, pajamas, whatever.  Today's trip to the nearest Osh Kosh & Carter's store cost me $48.93 CAD and this is what I got:

10 pieces of brand name clothing for an average of $4.89 each...Not too shabby!

Beach Bums

What do you do when the temperature hits 35.4 Degrees Celsius or 95.7 Degrees Fahrenheit?  Pray for snow, then remember you have to shovel it, then head to the beach!  This week we were very thankful that Lake Ontario never seems to warm up.  Cobourg Beach, in my opinion, is the cleanest and safest beach around.  Highly recommended!
