Salmon Cakes

I was so amazed at how well these turned out.  Even the kids thought they were wonderful!


2 medium potatoes, peeled and chopped
1 tbsp butter or margarine
1 tbsp fresh chopped parsley or cilantro
1 tbsp Dijon mustard
1/2 tsp salt
1/2 tsp lemon juice
1/4 tsp fresh ground pepper
1 egg, beaten
1 can of salmon, drained, boned and flaked (or you can use boned and skinned salmon to save time)
2 dashes hot pepper sauce (optional)

Boil potatoes until tender.  In a large bowl, mash potatoes with butter until smooth.  Stir in parsley or cilantro, mustard, salt, lemon juice, pepper.  Mix in egg, salmon and hot sauce.

Heat a large skillet or griddle on medium heat.  Add Canola or olive oil.  Using a large spoon, scoop mixture into roughly 6 patties, onto hot skillet. Shape and flatten with a fork.  Cook for 5-7 minutes on each side.  Serve with tartar sauce if desired.
