Local cucumbers and tomatoes, what could be better??
1 English Cucumber
1 Medium Tomato, seeded and chopped
1 tbsp Dijon Mustard
3-4 Tbsp White Wine Vinegar
fresh ground black pepper
Peel some of the cucumber skin, and slice. Cut each slice in half. In a medium bowl, add cucumber and sprinkle with sea salt. Let sit in the fridge for about 5-10 minutes to allow cucumber to crisp. Meanwhile, in a small bowl combine mustard and vinegar. Add to cucumber and stir. Add tomatoes and pepper just before serving, and mix well. Enjoy!
