Chicken Fajitas

So I fell off the face of the Earth. Or rather, I feel like I was pushed off.  The Universe just wants to laugh at me as I find my way back.

So I thought I would share a fabulous recipe to welcome myself back to my poor deserted blog. And maybe, in the next few weeks, you may hear my rants about why I drank a lot of wine neglected my blog.

2 Large Boneless Skinless Chicken Breasts
2 tbsp Canola Oil
Dash of Fresh Pepper
1/2 Red Pepper, sliced
1/2 Red Onion, thinly sliced
1 tbsp Lemon Juice
1/2 cup Mild Salsa
1 Tbsp Cilantro
10 Flour Tortillas
Optional Toppings:
Sour Cream
Cheddar Cheese
Hot Sauce

Cook chicken in oil until no longer pink.  Add peppers and onions and cook until tender crisp.  Add lemon juice, salsa and cilantro.  Cook on low until heated through. Place tortillas on a plate and microwave for 15 seconds. Scoop fajita mixture onto tortillas and top with grated cheddar, sour cream, and for fun, a little hot sauce.
